I don't think it was the Lord's will to use gas for grillin. It was always wood in the bible.

Isn't charcoal wood? In carnality, I use applewood pellets for more smokie effect. Carnality is from the root word in spanish Carne or meat.

Issues about charcoal:

Charcoal burns dirty - when it burns tiny flakes of soot are released in the air.

Can result in the development of carcinogenic compounds - Carcinogenic compounds are thought to be formed when fat from meat drips on the charcoal and then rises along with the smoke and then become deposited into the food.

Safer Charcoal use:

Use charcoal that is produced from oak hardwood charcoal and does not contain any limestone, oil, coal, petroleum or sawdust.

Well that's good.

I use only hardwood charcoal pieces (not briquettes) and I build the fire on one end and put the meat on the other end.

I use mostly mesquite. Oak is great. I really don't know about the carcinogens because we really don't have double blind studies. I do know we find more cancer of the esophagus when people consume raw meats like steak tartare or raw tuna steaks. But then there are other associated variables.
