I am blessed to live not far from the bean and corn fields now.AH the produce is great.Here is the Smothered Pork recipe for Sherry:
I package of nice pork steaks.Not too fatty.Get some with alot of good red
meat.
1 large Texas onion(yellow, I just like the way Texas sounds.) chopped
1 can rotel original recipe chopped or diced tomatoes.
1 to 2 cups water
1/4 cup cooking oil
Tony Chacheres cajun seasoning
Heat a dutch oven on high and add the oil.
When its sizzling hot add the meat that has already been seasoned with Chacheres.Brown it well on all sides.Add the chopped onion/rotel tomatoes.Continue to cook
with lid on medium adding water occasionally until meat is tender and gravy is nice and brown.Add water during cooking time so it doesn't burn.
Make about four cups of nice fluffy jasmine rice.
I use an ice cream scoop to put about two fluffy mounds of rice on a plate
and gravy on top with some meat on the side.
In order to fix the beans and snaps I start them on high with enough water to cover and boil them well.I don't add salt until they are finished as it makes the beans tough.When they are tender I uncover and cook on low.My mom in law adds a piece of ham to hers.I don't if they are a side dish.
I usually serve this with a salad and some good bread and cut up cantelope.
Sometimes the salad consists of fresh slices of tomatoes and cucumbers.
