Homemade Soup
With the cold weather spreading its love all through the North and South... got me to thinking about homemade soup.... no better way to warm up than with a steaming bowl of homemade soup... share your favorite, or a recipe if you have it... maybe if we talk about hot things long enough, we can all warm up

I gradually cook the items in this soup adding to the crock pot as each item is done
sauté a large onion and some garlic in olive oil and a little butter, add to the crock pot and turn the crock pot on low
add a container of chicken broth or you can make the broth with vegetable stock and a little saffron
add a can of whole tomatoes
add left over or stir fried chicken or turkey, or if you want you can substitute beans
keep stir frying and adding whatever other vegetables you want in the soup:
mushrooms
Carrots
greens
potatoes (if I add potatoes I usually dice and broil them before adding to the crock pot)
Once the crock soup is the consistency you want it to be, and then let it simmer in the crock pot until you are ready to serve it.
Also add some garlic power, basil, a little salt and pepper.

My favorite soup this time of year has to be Cowboy Soup. Anything with spice, now, that gets my attention!
I can my own tomatoes, but you can also use diced tomatoes. You can also use beans leftover from a prior meal, and add to the soup. You can also dice and cook your own potatoes.
In a large pot, stir fry
1-1/2 pounds hamburger, and drain.
Add:
2 cans diced tomatoes
1 can Rotel
1 jalapeno, seeded, diced
2 cans diced canned potatoes
2 cans Ranch-style beans
2 cups frozen corn
1 can cream mushroom soup
1/2 cup Velveeta, diced
2 Tbsp taco seasoning mix
Garlic, salt, pepper to taste
Cilantro can also be chopped and added.
Mix all together, and let simmer until Velveeta cheese has melted. Serve with jalapeno cornbread.

Anything made with Velveeta cheese and Rotel just HAS to be a hit!!!!

My family aren't fans of barley  Don't know why, but I've tried making it several times, and they don't like. Maybe you could share your recipe, or how you make it, and I could try it again. Maybe it is just the way I've cooked it (in chicken soup).

I can guarantee its a soup men love. I made it at Thanksgiving for a whole bunch of picky men eaters. They just about licked the pot clean! For those who like spice, having pickled nacho jalapenos as a side, and grated cheese on top, really takes it over the top!

Here's the recipe. Make a roast. Eat on it for two days. Take all the leftovers including broth and cook in a stew pot until very tender. Pull off any fat. Throw in a couple potatoes, a handful of barley, a can of tomato sauce, some frozen broccoli, okra and green beans, a spoonful of minced garlic. Thrown in a fresh cut up onion. Salt, Pepper. Cook down. Mix some cornstarch with water. Mix in. Serve.
