Pressing On
Tri-Level Brownies
1 cup quick-cooking rolled oats
1/2 cup unbleached flour
1/2 cup packed brown sugar
1/4 baking soda
1/4 t. salt
6 T butter, melted
3/4 cup granulated sugar
1/4 cup butter, melted
1 square (1 oz) unsweetened chocolate, melted and cooled
1 egg
2/3 cup unbleached flour
1/4 t. baking powder
1/4 t. salt
1/4 cup milk
1/2 cup chopped nuts (pecans) I always skip this part!
1 square (1 oz) unsweetened chocolate
2 T. butter
1 1/2 cups sifted powdered sugar
1 t. real vanilla - no imitation
1/3 to 1/2 cups chopped pecans
Stir together first 5 ingredients. Pat into 11x7x1 1/2- inch baking pan. Bake in 350 oven for 10 minutes. Cool.
Mix granulated sugar, 1/4 cup butter and 1 square melted chocolate. Add egg; beat well. Stir together the 2/3 cup flour, baking powder, and 1/4 t. salt. Add to chocolate mixture alternately with a mixture of milk and the 1/2 teaspoon vanilla. Stir in chopped nuts (I omit). Spread over baked layer. Bake in 350 oven for 25 minutes or till done. Cool.
To make frosting, melt 1 square chocolate and 2 Tablespoons butter over low heat; stir constantly. Remove from heat; stir in powdered sugar and the 1 teaspoon vanilla. blend in enough hot water (about 2 Tablespoons) to make an almost pourable consistency. Frost brownies. Top with pecans (I mix them into the frosting). Cut into bars. Makes 16 brownies.

Every year a group of my friends get together for a cookie swap. Got any good cookie recipes? Here is the one I used last year. It was a big hit.
It is festive looking and yummy.
Craisin Crumbles
1 stick butter
1/2 cup sugar
1/4 cup firmly packed brown sugar
1 egg
1/2 teaspoon vanilla
1 cup self-rising flour
1/2 bag white chocolate chips
2 cups coarsely chopped pecans
1 1/2 cups Craisins ( dried cranberries)
1. Heat oven to 350 degrees. Beat butter and sugars in a large bowl with electric mixer until light and fluffy.
2. Mix in flour.
3. Stir in white chocolate chunks, pecans, and dried cranberries.
4. Drop by rounded tablespoonfuls, 1 1/2 inches apart, onto ungreased cookie sheet. Bake for 12 to 15 minutes or until light golden brown. Cool for 2 to 3 minutes; remove from cookie sheets and cool and wire racks. Store in tightly covered container.

Re: Cookies and Brownies
Guys, these cookies are AWESOME!!!!
My daughter has been making them and I made them this week. They get a 10 rating from me!
CINNAMON BUN COOKIES
www.RecipeGirl.com
VANILLA COOKIE DOUGH
½ cup (2 ounces) powdered sugar
¾ cup (1½ sticks, 6 ounces) unsalted butter
½ tsp salt
1½ tsp vanilla extract
1½ cups (6¼ ounces) unbleached all-purpose flour
MIDDLE:
1 large egg white
1 Tbs water
¼ cup granulated sugar
1½ tsp ground cinnamon
ICING:
½ cup powdered sugar
2 Tbs heavy whipping cream
½ tsp vanilla extract
½ tsp ground cinnamon
1. Prepare dough: In a medium-sized mixing bowl, cream together the sugar, butter, salt and vanilla. Add the flour, stirring to make a cohesive dough. Flatten the dough into a disk, wrap it in plastic wrap, and refrigerate until you’re ready to use it.
2. Roll the dough: Transfer chilled dough to a lightly floured piece of parchment or waxed paper. Roll it into a 9×12-inch rectangle. In a small bowl, whisk together egg white and water until foamy. Brush onto rolled out dough. In another small bowl, whisk together sugar and cinnamon. Sprinkle it evenly over the dough. Starting with a long edge, carefully roll the dough into a log, sealing the edge (if dough sticks to parchment, gently use a metal spatula to guide it off of the paper). Wrap in plastic wrap or parchment, and freeze until firm.
3. Bake the cookies: Preheat oven to 350°F. Lightly grease (or line with parchment) two cookie sheets. Remove the dough from the freezer and unwrap it. Using a sharp knife, gently cut it into ½-inch slices. Transfer them to the prepared baking sheets. Bake the cookies for 12 to 15 minutes, until they’re a light golden brown. Remove them from the oven and transfer to a rack to cool.
4. Ice the cookies: Sift or strain the powdered sugar into a medium-sized bowl to remove any lumps. Whisk the cream into the sugar to make a smooth icing. Drizzle or spread icing onto cookies (or serve alongside in a bowl for dipping).
Yield: 2 dozen cookies
