I have not cut the cake yet! Waiting for our family get together on Christmas Eve.
Here's the recipe I used......(Most recipes call for that bitter candied citron peel....I never use that....I think that is the taste that turns most people off from fruitcakes! LOL)
Fruitcake
2 (12 -16 oz) bags vanilla wafers, crushed (easily done in food processor or chopper)
1 (16 oz) container candied cherries, chopped
1 (8 oz) container candied pineapple, chopped
1 cup golden seedless raisins
2 1/2 cups chopped pecans (can mix a few walnuts)
1 stick butter, melted
4 eggs
1 1/2 cups (12 oz can) evaporated milk
1 tsp. vanilla
1 cup sugar
Combine crumbs, fruits, pecans in large bowl.
Beat eggs, butter, milk, vanilla, and sugar together.
Pour egg mix over fruit mixture, blend well until moist.
Line bottom of tube pan with wax paper. Grease sides
and bottom.
Pack cake mixture into pan. Bake 1 hour at 325 degrees.
Cool 5 to 10 minutes then remove from pan, tear off paper.
Cool completely and wrap tightly in foil.
