I can't help but think that a Search for a "perfect" canon is essentially
a search for Law, when we now have Grace?

Don't you think the sheep will be the ones who read the story about the sheep and the goats, and fed the hungry, gave drink to the thirsty, took strangers in, visited prisoners and the sick -- so they would be considered sheep? Why else would Jesus tell that story? It seems like he would expect people to hear it and act on it.
Now, of course, there will be many people who do those things who never heard that story, some who never even heard of Jesus. Maybe those are the unwitting sheep? They will be given grace, which you mention so often, because of their works.
Sad for the goats, though. No grace for you!

Yes, the parable was told as a reflection of the kingdom.
And Christ has more names than we, anyone, knows.
Grace is not given, but accepted in the sense that now operates for a human; it has already been provided, and it is free; every time you extend it to a goat, it grows: )

"And ye shall wash your clothes on the seventh day, and ye shall be clean..." other places. There is grace evident even in this obvious exposition of Law, written in a time different from ours; and what you intimate here is completely apples and oranges. Num 31 like any Scripture must be understood in context.
