Elderberry Syrup
2/3 cup dried or fresh elderberries (dried can be bought at amazon.com or at local health food store)
3-1/2 cups water
2 tablespoons fresh or ground ginger
1 tsp cinnamon
1/2 tsp cloves, whole, or powdered
1 cup raw honey - best if bought from a local farmer
Mix ingredients, EXCEPT HONEY in a medium saucepan. Bring to a boil, reduce heat, and simmer for 45 minutes or so, until liquid has been reduced to half. Remove from heat, and let cool. Strain the mixture into a glass bowl or measuring cup. Add raw honey and stir well. Pour mixture into a 16-oz canning jar with lid. Label the syrup. Store in the refrigerator.
Standard dose is 1/2 tsp to 1 tsp for kids and 1/2 Tbsp to 1 Tbsp for adults. If the flu does strike, take the normal dose every 2-3 hours instead of once a day until symptoms disappear.
