Chicken Salad Recipe

*Note this thread will be moved to the food section.

Do you have a really good Chicken Salad recipe for a sandwich, you would be willing to share?

I am looking for the best.

Delicious! Especially on croissants...

Fancy Chicken Salad

2 cups cooked chicken (approx 4 boneless/skinless chicken breasts)
1 cup diced celery
1 cup chopped apples
1 cup halved grapes (optional)
½ cup chopped FRESH basil (this gives it a wonderful flavor)
½ cup chopped nuts (walnuts or pecan are best, but slivered almonds work also)
Light Mayonnaise

Chicken Salad with Grapes
Serve this chicken salad as a sandwich spread or mound on lettuce for a luncheon dish.

Ingredients:
•1 to 1 1/2 cups diced chicken
•8 to 12 red or green seedless grapes, halved
•4 tablespoons mayonnaise
•1 rib celery, chopped
•1 green onion, with about 2 inches of green, chopped
•salt and pepper, to taste
•dash curry powder, or to taste, optional

Preparation:

Combine ingredients until blended. Spread on bread for sandwiches or arrange on lettuce leaves.
Serves 4.

Panera Chicken Salad

Ingredients
1 rotisserie chicken, about 2 ¼ pounds
¾ cup mayonnaise
¾ cup finely chopped celery
2 tablespoons dill pickle relish
1 tablespoon chopped fresh tarragon
½ teaspoon salt
¼ teaspoon ground black pepper
12 thin slices of Panera Bread Country loaf
6 leaves romaine lettuce, torn


Directions

1. Using your fingers, remove and discard the skin, bones, and excess fat from the chicken, placing the chicken meat in a large bowl. Tear or chop meat (you should have about 3 1/2 cups).



2. Add mayonnaise, celery, relish, tarragon, salt, and pepper to the bowl. Stir until thoroughly combined. Spoon onto the bread, adding a lettuce leaf to each sandwich.

Charlies Famous Chicken Salad with Grapes

Ingredients:

.2 1/2 cups diced cooked chicken
1 cup finely chopped celery
1 cup seedless grapes, halved
1 cup chopped walnuts or 1 cup pecans (optional)
1 small minced onion
1/2 teaspoon salt
1 teaspoon Worcestershire sauce
1/2 cup Miracle Whip
Directions:

Combine all ingredients; chill.

Serve with just about anything- crackers, chips, rolls, bread or bagel.

I love apples in my Tuna Salad as well. With onions it is hard to beat.
