Sweet potatoes are something I have never been able to develop a taste for. I think it goes back to when I was young. My mother made me stay at the table one night until late, because I wouldn't eat these nasty sweet potatoes she had made. I eventually won the argument, even though I did try to eat them. Ever since then I haven't been able to eat sweet potatoes.
Sister Alvear our family almost literally lived on sweet potatoes once. I cannot eat them now. There are a lot of sweet potatoes grown near us. One little town has a sweet potato festival every year.

Beloved, now are we the sons of God, and it doth not yet appear what we shall be: but we know that, when he shall appear, we shall be like him; for we shall see him as he is. 1 John 3:2 KJV
Besides simple starches, sweet potatoes are rich in complex carbohydrates, dietary fiber, beta carotene (a vitamin A equivalent nutrient), vitamin C, and vitamin B6.
In 1992, the Center for Science in the Public Interest compared the nutritional value of sweet potatoes to other vegetables. Considering fiber content, complex carbohydrates, protein, vitamins A and C, iron, and calcium, the sweet potato ranked highest in nutritional value. According to these criteria, sweet potatoes earned 184 points, 100 points over the next on the list, the common potato. (Wikipedia)
