Barb/Apologist

Swiss Veggie Casserole

Prep: 5 min. (that's a winner right there!!)

Bake: 45 min.

1 can Campbell's Cream of Mushroom Soup

1/3 cup sour cream (another winner)

1/4 tsp. ground black pepper

1 bag (16 0z.) frozen veggie combination (broccoli, cauliflower, carrots), thawed

1 can (2.8 oz.) French's Fried Onions

1/2 cup shredded Swiss cheese

1. Stir soup, sour cream, pepper, veggies, 2/3 cup onions and 1/4 cup cheese in 2 qt. casserole and cover
2. Bake at 350 for 40 min. or until veggies are tender and stir
3. Sprinkle remaining oinons and cheese over mixture...bake 5 min.

Sounds yummy!!

Clarabel

Normas red beans and rice

White rice
2 cans chicken broth
garlic cloves
red beans
1/4 t.red pepper flakes
a pinch salt/ pepper to taste
1 sm. green pepper/red pepper
1 sm. red onion
1 tbs butter
chicken ( optional)
2 scrambled eggs ( optional)


Cook rice (per package instructions) in chicken broth (Will have to add water)
put aside
Toss minced garlic cloves, red onion, cut up small green/red peppers in frying pan and fry till slightly soft.
Add your rice, beans, red pepper flakes, salt/pepper, Cook a bit to soak in flavor, maybe 10 minutes on semi low.

Lastly Can add cooked chicken pieces and or eggs if desired.
Good with enchildas.

Uppity Green Beans

Blanch fresh green beans in salted water until about half cooked. Drain. Microwave bacon strips also until about half cooked. Grab a handful of green beans, wrap the bacon around it and secure with a round toothpick.

In a saucepan, combine a stick of butter, about a 1.5 cups of brown sugar and six minced garlic cloves. (This should make enough sauce to cover 6-8 bundles.) Cook over medium-low heat. After the butter and sugar melt, continue to cook for about 10 minutes so that the flavors combine.

Pour sauce over green bean bundles and bake at 350 for about 15-20 minutes. You'll know that they're done when the bacon has browned and the beans are tender.

The sauce melts to a very liquid state in the oven. Make sure that you baste the bundle before serving.

Corn Casserole

2 boxes Jiffy Corn Bread Mix
3 eggs
1 stick butter
1 can creamed corn
2 cans regular corn (or 1 small bag frozen corn)
8 oz. sour cream
salt & pepper to taste

Mix all together and bake in a 350 degree oven for 1 hour and 15 minutes or until golden brown.

Easy and delicious!

Corn Cassrole

1 can cream style corn
2 eggs slightly beatn
1 cup jiffy corn muffin mix
3/4 cup milk
1/2 cup oil
1 1/2 cups grated cheddar cheese
1/2 t. salt

Mix all ingredients together and put into casserole dish. Bake uncovered for 1 hour - 350 degrees.

Cream Cheese Corn

2 cans of corn......drained
1 can of Rotel tomatoes NOT drained
1/2 block of cream cheese

Add corn and Rotel and heat until hot, then DRAIN, stir in cream cheese. Add pepper to taste.

Large group

4 cans of corn
2 cans of Rotel
1 Block of cream cheese

Larger group......fills crock pot

8 cans of corn
4 cans of Rotel
2 Blocks of cream cheese


*co-worker gave me this recipe. I have not tried it yet, but she said many have requested the recipe, so it must be pretty good.
