Yet, I cook in an iron skillet and I have crispy and straight bacon as well.
Would you know why?

iron probably heats more evenly. when i use a skillet the center is hotter so the center cooks faster than the outer parts of the bacon
and bacon looks like this

When I cook using a skillet I turn my bacon. They end up coming out evenly cooked and looking like your second picture.
