Nothing beats Iron.

I've tried radiation therapy on bacon and found it not up to "my" standards.

Ovens crisp more evenly and the bacon comes out straight

Crispy and straight?

If that's important to you then I can see the point.

Yet, I cook in an iron skillet and I have crispy and straight bacon as well.

Would you know why?

I agree: iron skillet, properly seasoned, is the proper way to fry bacon. Now, it has to be a true iron skillet, not one of those aluminum deals where only the outside is coated. It needs to be iron all the way through.

My wife cooks almost exclusively on a skillet. Tonight, she made homemade breakfast sausages from local, all natural, organic, ground pork meat. They were deliciosos, to say the least.

Do you use a bacon press?

I agree, cooking bacon in an iron skillet is the best way to go. We have several Griswold iron skillets that are very old. They cook the best of everything. I cook just about everything in my iron skillets - cobbler, biscuits, corn bread, bacon, casseroles... I love them.

I made a awesome homemade gravy in my grandmother's cast iron skillet a few days ago from scratch.
