How long has it been since you had chili made with beef that WAS NOT ground beef? My mom always made chili with meat cut into cubes especially for chili.

Last time I made it...
I use stew meat or cheap cut of sirloin chunked into cubes. Brown them, then throw 'em in with some stock, garlic, crushed tuhmaters, chopped chipotles, cumin, tuhmater paste, salt and pepper.

Sounds right on target for a good, satisfying bowl of REAL chili!
How is the weight loss coming?

At least you don't have to suffer through what is often called "BBQ" in Wisconsin... Sloppy Joe's. UGH!

It's not going... but it ain't coming either.
I'm about steady... haven't been as faithful to the gym as I should be. Just being honest.
I'm training myself to eat better in the mean time though.

Ladies and Gentlemen, we have a winnAR!
The exception for ground meat is ground venison - it's so lean that it doesn't make the chili unnecesarily greasy like ground beef does.

Ground turkey works good too, IF used in addition to the cubed beef. I've done that a few times.
I like lamb in my chili too. But you gotta have beef all the way.
What's up with this "chicken chili" people try to pass off as chili?

I have occasionally tasted normalcy, yae, even in Wisconsin. We're a half hour from a Famous Dave's BBQ place as well as a Buffalo Wild Wings. Then there is my old standby Quaker Steak & Lube.
