If it's processed or packaged before you get there it's not as healthy. If you watch them shave it for you it's better. Turkey is very low in fat content.

Albacore is a better choice of fish than Tuna. It's not such a fishy taste and is a meatier fish. I mix that with Pica de Gallo - very good!

Most stores now have a deli that has roasted turkey and cooked ham. They will slice it for you if you ask.

- chopped pork shoulder meat with ham meat added
- salt (for binding, flavor, and firmness)
- water (to help in mixing)
- sugar (for flavor)
- sodium Nitrite (for color and as a preservative)
