Does anyone make potato/peanut butter candy?

You mix a couple tablespoons of mashed potatoes with powdered sugar - roll it out and put peanut butter on it, then roll up and cut into pieces.

Just wondered if there's a recipe out there - I just made some from memory of my mom making it.

Well, found a bunch on the net:


Mashed Potato Peanut Butter Candy

1 medium potato, boiled and mashed
1 (1 lb.) box powdered sugar
1/4 teaspoon vanilla
Flour (if needed)
Peanut butter

Mix together potato, powdered sugar and vanilla. If needed, add flour to make a dough the consistency needed to roll. Roll on floured surface about 1/4 inch thick. Spread with a thick layer of peanut butter and roll as a jelly roll. Cut into 1/4 inch thick slices.

I make peanut butter candy, without potato's.

I've never made this, but here is a recipe for "Potato Candy"

Great Grandmother's Potato Candy Recipe

1 C. leftover mashed potatoes that had butter and cream added
3 C. powdered sugar (at least)
1/4 t. salt
1 t. vanilla
Peanut butter

Mix the potatoes, powdered sugar, salt and vanilla and knead. If mixture is too thin, add more powdered sugar.

Roll mixture to 1/4 -inch thickness (see note) Spread a layer of peanut butter, about 1/8 -inch thick over the potato. Roll into a loaf and cover with wax paper or plastic wrap.

Refrigerate at least 1 hour before cutting. Slice into 1/4 -inch slices.

Note: Best when rolled out onto a pastry cloth with a covered rolling pin covered in powdered sugar.
