Here you go. Empanadas are a Latin American dish. They are pastry shell tunovers. They can be sweet or savory.

Empanadas De Camarao ( shrimp and hearts of palm)

Sealer/Glaze
1 Egg white
2 TB water, milk or cream

FILLING
2 TB. Unsalted butter
1 lg. Onion, chopped.
2 cloves of garlic
3 tomatoes chopped
1/2 tsp. ground cardamon
1/8 tsp. ground cloves
1/4 tsp. pepper
1 1/2 cups Hearts of palm
3 TB. parsley
1 lb. Shrimp

In a skillet heat butter, sauté onion, & garlic over med. heat until translucent. Add tomatoes, cardamon, cloves and pepper. Cook about 8 more min. Add h.o.p. & cook until liquid has evaporated.(5 min) Set aside and let cool.(can be refridgerated overnight.)

Preheat oven to 400*. Put 1 TB. of filling in center of dough that has been cut in 4 in. squares. Put shrimp on top. Moisten 2 edges of dough with the glaze mixture and form into triangles. Seal edges with a fork.

Place empanadas on baking sheet lined with parchment. Brush with remaining glaze & bake for 25 min. or until golden brown. Can also be fried.

Transfer to wire rack and cool slightly. Serve warm. After cooking allow to cool and they can be frozen and reheated in the microwave.

I make my dough, however you can buy a dough or even use prepared pie crust dough.

I generally make these once every 3 months and always put some in the freezer.

Next week this time, my dinner will probably be Sukuma Wiki and Ugali, but I won't have internet access in Western Kenya, so I will post it now in advance! I love me some Sukuma Wiki!!!

Last night we were in Shipshewana, IN, and ate at the Blue Gate Restaurant. It was wonderful!!

This was what we had...

Family Style Dining:

"Experience a traditional Amish meal just like we serve in our homes,
with the selection of a buffet, brought tableside in bowls and platters"

All you can eat: Tender roast beef, homemade meatloaf or smoked ham may be selected to accompany fried chicken as your entrees.

Your meal also includes real mashed potatoes, chicken dressing, gravy, vegetables, homemade noodles, a fresh garden salad, homemade bread, and your choice of pie, bread pudding or ice cream, and a beverage.

Sweet Potato Casserole & Specialty Desserts and Seasonal Pies Available.

Yummmm!!! Chicken Kiev (NOT the frozen kind), Green Beans, New Potatoes, Corn on the Cob, Crescent Rolls. I love Chicken Kiev.
