Leftover Turkey Recipes
I just found this recipe that I want to try with the leftovers. Anyone else have anything good?
TURKEY & CORNBREAD CAKES w/CRANBERRY RELISH
7 T. butter, divided
1/2 c. chopped onion
1/2 c. chopped celery
2 cloves garlic, minced
1T. minced sage
3 c. crumbled cornbread
2-1/2 c. chopped cooked turkey
1/2 c. mayonnaise
1 egg
1/2 t. poultry seasoning
1/2 t. salt
1/4 t. pepper
Cranberry Relish (following)
In large skillet, melt 3 T. butter over med. heat. Add onion, celery, garlic, and sage. Cook five minutes till tender. In a medium bowl, combine onion mixture, cornbread & turkey. In a small bowl, combine mayonnaise, egg, poultry seasoning, salt & pepper. Add to onion/cornbread/turkey mixture. Stir gently to combine. Shape mixture into ten patties. In a large skillet, melt remaining butter over med. heat. Cook patties, in batches, 4-5 minutes per side or until lightly browned. Serve with Cranberry Relish.
CRANBERRY RELISH
1 - 16 oz. can whole-berry cranberry sauce
1 can mandarin oranges, drained
2 T. sugar
1 t. balsamic vinegar
In a medium saucepan, combine all ingredients. Bring to a boil over medium heat. Reduce heat and simmer twenty minutes. Serve warm over turkey cakes.

WOW, that sounds good...I may try it, too. Oops, I just remembered I'm not cooking the turkey this year. We're eating with my husband's family. I guess I will have to try it another time.

Funny - I was just standing in the shower thinking that I can't wait till Thanksgiving is over so we can have Aunt Phyllis's Turkey. Mmmmmm
Aunt Phyllis's Turkey
Layer left-over turkey down the middle of a 9x13 pan.
Put broccoli cuts or pieces on both sides (about 1 1/2 bags)
Cover all of this with cheese slices
Mix 1 can (13.5 ox) evaporated milk with 1 can musroom soup.
Pour over all
Bake at 350 degrees for 25 minutes.
Sprinkle with Durkee Onion Rings and bake another 5 minutes
This is so simple, but sooooooooo good!!!
By the way, lots of times when I make this, I skip the layering idea. I just mix the chopped up left-over turkey in with the broccoli pieces and throw it in the pan. Then I follow the rest of the directions. I almost like it better this way.

I have had White chilli before and it is real good. I found this recipe at America's Test Kitchen site and I will try it after Thanksgiving. I will probably back off on the chilli peppers.
White Turkey Chilli
Serves 6 to 8.
Adjust the heat in this dish by adding the minced ribs and seeds from the jalapeņo as directed in step 6. If Anaheim chiles cannot be found, use an additional poblano and an additional jalapeņo. Serve chili with sour cream, tortilla chips, and lime wedges.
Ingredients
1 bone-in, skin-on split turkey breast (about 2 1/2 pounds), trimmed of excess fat and skin
Table salt and ground black pepper
1 tablespoon vegetable oil
3 medium jalapeņo chiles
3 poblano chiles (medium), stemmed, seeded, and cut into large pieces
3 Anaheim chile peppers (medium), stemmed, seeded, and cut into large pieces
2 medium onions , cut into large pieces (2 cups)
6 medium cloves garlic , minced or pressed through garlic press (about 2 tablespoons)
1 tablespoon ground cumin
1 1/2 teaspoons ground coriander
2 cans (15 ounces each) cannellini beans , drained and rinsed
3 cups low-sodium chicken broth
3 tablespoons fresh lime juice (from 2 to 3 limes)
1/4 cup minced fresh cilantro leaves
4 scallions , white and light green parts sliced thin
Instructions
1. Season turkey liberally with salt and pepper. Heat oil in large Dutch oven over medium-high heat until just smoking. Add turkey, skin-side down, and cook without moving until skin is golden brown, 6 to 8 minutes. Using tongs, turn turkey and lightly brown on other side, about 2 minutes. Transfer turkey to plate; remove and discard skin.
2. While turkey is browning, remove and discard ribs and seeds from 2 jalapeņos; mince flesh. In food processor, process half of poblano chiles, Anaheim chiles, and onions until consistency of chunky salsa, 10 to twelve 1-second pulses, scraping down sides of workbowl halfway through. Transfer mixture to medium bowl. Repeat with remaining poblano chiles, Anaheim chiles, and onions; combine with first batch (do not wash food processor blade or workbowl).
3. Pour off all but 1 tablespoon fat from Dutch oven (adding more vegetable oil if necessary) and reduce heat to medium. Add minced jalapeņos, chile-onion mixture, garlic, cumin, coriander, and 1/4 teaspoon salt. Cover and cook, stirring occasionally, until vegetables soften, about 10 minutes. Remove pot from heat.
4. Transfer 1 cup cooked vegetable mixture to now-empty food processor workbowl. Add 1 cup beans and 1 cup broth and process until smooth, about 20 seconds. Add vegetable-bean mixture, remaining 2 cups broth, and turkey breast (bone-side down) to Dutch oven and bring to boil over medium-high heat. Reduce heat to medium-low and simmer, covered, stirring occasionally, until turkey registers 160 degrees on instant-read thermometer, 30 to 35 minutes.
5. Using tongs, transfer turkey to large plate. Stir in remaining beans and continue to simmer, uncovered, until beans are heated through and chili has thickened slightly, about 10 minutes.
6. Mince remaining jalapeņo, reserving and mincing ribs and seeds (see note above), and set aside. When cool enough to handle, shred turkey into bite-sized pieces, discarding bones. Stir shredded turkey, lime juice, cilantro, scallions, and remaining minced jalapeņo (with ribs and seeds if desired) into chili and return to simmer. Adjust seasonings with salt and pepper and serve.

This is one my late husband Horace’s Mothers recipe’s You will find it sumptuous indeed.
We call it "Gobbler Cobbler"
This savory "Gobbler" cobbler is yet another great way to enjoy leftover turkey. Serve this cobbler with cranberry sauce on the side and a tossed green salad or fresh sliced tomatoes, if desired. If you're short on time, top the filling with your favorite homemade or refrigerated biscuits just before baking.
Ingredients:
• 4 tablespoons butter
• 2 ribs celery, sliced
• 1 bunch green onions, about 6 to 8, thinly sliced
• 6 tablespoons flour
• 2 cups chicken broth
• 1 cup leftover or canned turkey gravy, or use more chicken broth
• 1/2 teaspoon salt, or to taste
• 1/8 teaspoon freshly ground black pepper
• 1/4 teaspoon poultry seasoning
• 2 cups frozen mixed vegetables, thawed
• 3 cups diced leftover cooked turkey
• -
• Topping:
• 1 large egg
• 1/2 milk
• 4 tablespoons melted butter
• 1 cup all-purpose flour
• 1 cup cornmeal
• 2 teaspoons baking powder
• 1 tablespoon granulated sugar, optional
• 1/4 teaspoon salt
• 1 scant teaspoon poultry seasoning or crumbled rubbed sage
• 1 teaspoon dried parsley flakes, optional
• -
• cranberry sauce, optional
Preparation:
In a large saucepan, heat 4 tablespoons butter over medium-low heat until frothy; add celery and cook until celery is tender. Add green onions and cook 1 minute longer. Add 6 tablespoons flour, stirring until well blended and bubbly. Add chicken broth and turkey gravy; continue cooking, stirring, until thickened and bubbly. Add seasonings, thawed vegetables, and turkey; heat through. Pour into a buttered 9-inch square pan or 2-quart baking dish.
Heat oven to 400°.
Topping:
In a medium bowl, whisk 1 egg with the milk and melted butter. In another bowl, blend the 1 cup of flour with cornmeal, baking powder, salt, poultry seasoning, and parsley. With a wooden spoon, stir dry ingredients into the egg and milk mixture until well blended. Drop spoonfuls of the dough all over the hot filling. Bake for 30 to 35 minutes, or until topping is browned and filling is bubbly.
Serve with cranberry sauce on the side, if desired. Serves 4 to 6.

Here is the simplest left over turkey recipe (and my favorite):
Take left over turkey from refrigerator.
Spread a small amount of light mayo on two slices of wheat bread.
Add some tomato and lettuce.
Eat.
