The reason there isn't a record of christian schools in the book of Acts is because the book of Acts is simply that, the "Acts of the Apostles." It's the record of what the disciples of Jesus did after He ascended and the outpouring of the Holy Ghost on the Day of Pentecost.

If you read through Jewish history, you would see they were instructed from the beginning to teach and instruct their children. Even in the days of Jesus, Jewish children began instruction at an early age.

Something I was told when I visited a synagogue, Jewish children begin studying at the age of five.

It began with Abraham, who was blessed because "I have chosen him, that he will instruct his children and his house after him to follow in God's ways to perform righteousness and justice." Genesis 18:19
