Christmas Goodies to Make

Chocolate Covered Cherry Cookies
1 1/2 cups flour
1/2 cup cocoa
1/2 cup butter
1 cup sugar
1/4 teaspoon salt
1/4 teaspoon baking powder
1/4 teaspoon soda
1 egg
1 1/2 teaspoons vanilla
48 maraschino cherries
In a mixing bowl combine flour and cocoa; set aside. In a large bowl beat the butter with a mixer until softened. Add sugar, salt, baking powder, and baking soda. Beat until well combined. Add egg and vanilla. Beat Well. Gradually beat in the flour mixture. The dough will be stiff.

2. Shape the dough in to 1 inch balls; place on an ungreased cookie sheet. Press down center of the ball with your thumb. Drain the cherries reserving the juice. Place a cherry i the center of each cookie.

3. In a small saucepan, combine the chocolate pieces, and condensed milk. Heat until the chocolate is melted. Stir in 4 teaspoons of cherry juice.

4. Spoon about 1 teaspoon of frosting over each cherry. spreading to cover the cherry. (Frosting may be thinned with additional juice if needed.) Bake in a 350 degree oven for about 10 minutes. Remove and let cool. Makes about 48


Crockpot Candy
Layer in Crockpot in this order
1 16oz jar of unsalted peanuts
1 16 oz jar salted peanuts
1 12 oz package of chocolate chips
1 12 oz package butterscotch chips
1 8 oz bar of German chocolate baking bar(broken up)
1 package white almond bark (broken up)
1 large chocolate bar ( broken up)
Put Crockpot on high for 2 hours ( no longer or it will burn). Stir to mix and drop on waxed paper. Let cool and store in an airtight container.

The trouble I see here is we have a 60 gallon Crock Pot. I don't know where the old one went, but I forsee steamed candy cooking in the Booom house tonight. If not, those no bake oatmeal choc cookies.

Which chocolate pieces and condensed milk would that be? Am I not reading this correctly????

My favorite fudge

1 pkg. milk chocolate chips
1 cup butter
2 eggs
1 lb. powdered sugar
vanilla

Melt the chocolate chips and butter, add eggs, mix well. Add powdered sugar and stir really well to get all lumps out, I use a whisk. Throw in some vanilla. Pour into a 8"X8" pan and refrigerate.

I have posted this somewhere else but I will add it here also.

Funfetti Cookies (serves 40)

1 pkg Pillsbury Funfetti cake mix
1/3 cup oil
2 eggs
1 tub Pillsbury Pink Vanilla Funfetti icing

Stir together dry cake mix, oil and eggs until thoroughly moistened. Stir in decorator sprinkles from the cake mix (if packaged separately). Shape into 1-inch balls. Flatten to approximately ¼ inch with bottom of lightly floured glass. Bake at 375 degrees for 6 to 8 minutes. Cool 1 minute and remove to cooling racks. Ice with frosting while cookies are still slightly warm. Sprinkle with Funfetti sprinkles immediately after frosting. Allow to sit a room temperature 30 minutes so frosting is not overly soft. Store in airtight container.

Trash

It is really called Trash and it is a favorite of my nieces and nephews from when they were pre-teen. I don't have the amounts of what to add, but take the following ingredients-

Cheerios
Froot Loops
Chex Cereal (We use Corn)
White Chocolate chips (whole bag)
Stick Pretzels (We are trying the Frito-Lay Holiday kind this year as a change)

Melt the Chips, and add the cereal and pretzels. Pour into one glob on waxed paper. It will then be broken up and placed in ziplock bags. Once for a Youth Activity, we bought a small waste basket at the Dollar Store, lined with plastic and served Trash from a trash can!

We like to do breakfast after opening gifts on Christmas morning. My friend just sent me this recipe. I think we're going to try it this year.

Quiche Lorraine

2 dozen small eggs [I use Egg Beaters equal to 8 large eggs]
1/4 c butter or margarine, melted
1/2 c chopped green pepper
1/2 c chopped onion
1 can mushroom soup [you will not dilute this with water]
1/2 c cooking sherry
1/2 c milk
1 pound bacon, fried and crumbled
1 small cans mushrooms, drained [optional]
1/2 pound shredded cheddar cheese

Beat eggs with milk and melted butter. Cook eggs until set. Butter or spray 9 x 13 pan. Pour in eggs. Top with bacon, onion, pepper, and mushrooms. Warm soup with sherry. Spread over the eggs and other stuff. Top with cheese. Cover, refrigerate overnight. Uncover and bake at 250 degrees for 50 to 60 minutes. 12 servings

WW points: 7 points per serving; if made with 1/2 pound of bacon and lowfat cheese, 1 serving = 5 points

We always to a Christmas Brunch on Christmas Eve at my grandma's house, I'll have to pass this recipe along!

Quick fudge

1 pkg choc chips
3/4 pkg butterscotch chips
one can of sweetened condensed milk

Melt and stir over low heat--add t of vanilla

Add slivered almonds and toffee pieces (or whatever you like...I just like it this way!)

Pour into buttered pan and let it set---I put mine in the fridge though

Opps I posted in a hurry last night. Here is the correction
