How do you make your meringue?
I have received a couple different recipes lately for meringue. How do you make yours?

MERINGUE
4-6 Egg Whites
1/2-3/4 Teaspoon Cream of Tartar
1/2 Cup Sugar
1/2 Teaspoon Vanilla Extract
• Beat egg whites and cream of tartar at high speed with an electric mixer, just until foamy.
• Gradually add sugar, 1 Tablespoon at a time, beating until stiff peaks form and sugar dissolves (2-4 minutes).
• Add vanilla, beating well.
• Spoon onto pie and bake according to recipe (usually at 325 for 25-28 minutes or until golden) Enough for 1 (9 inch) pie.
* For a fluffier meringue, make sure egg whites are at room temp. before beating (a full 30 min.)
*Copper, stainless steel, or glass bowls work best. Use the size bowl your recipe calls for.
*Important: Be sure there is NO trace of oil on your bowls or beaters.
*Begin to add your sugar as soon as soft peaks begin to form.
*Once all the sugar has been added, beat till stiff peaks form. Sugar will be completely dissolved. Rub a little meringue between your fingers, it should be smooth.
*ALWAYS spread meringue on pie while it is HOT. This helps prevent it from "weeping". AND be sure meringue reaches the edge of pastry in order to form a "seal" and to keep it from shrinking.
Meringue is like Divinity; AVOID MAKING IT ON HUMID DAYS. the sugar will absorb moisture, thereby making the meringue unstable.

This is the recipe that I use. It always does very well for me. I don't care for Cream of Tartar for some reason. I don't like it in Sugar Cookies either.
Recipe is for one pie.
Meringue:
3 egg whites
1/8 t. salt
6 T. sugar
1/2 t. vanilla extract
Beat egg whites and salt until frothy. Gradually add sugar, beating well after each addition. Continue beating until stiff peaks are formed. Blend in vanilla extract.

I have never heard never make it on humid days. Great tips.

This is very similiar to the one my SIL gave me this weekend, except she adds cream of tartar.
Also, you can add lemon flavoring when making a lemon pie.

This is my SIL recipe.
2 pies
6 egg whites
1/2 teaspoon cream tartar
1/2 teaspoon vanilla
dash salt
Beat until soft peaks then gradually add 1/2 cup sugar.

This recipe is from an elderly lady in my church.
1 Tablespoon cornstarch
1-2 Tablespoons sugar
1/2 cup water
Cook until thick and clear. Let cool and beat.
3 egg whites
6 Tablespoons sugar
Salt
1 teaspoon vanilla
Add cooled cornstarch mixture and beaten egg whites mixture together. Spread on pie.
