I would have to list book series (trilogies or otherwise) in my top 5.

The Belgariad (5 books) by David Eddings

The Malloreon (also 5 books) and also by David Eddings

Thrawn trilogy (Star Wars) by Timothy Zahn

Death Gate series (5 books) by Margret Weiss and Tracy Hickman

The first 6 Dragon Lance books (two trilogies), also by Margret Weiss and Tracy Hickman
