Actually it means anything but the beginning you seem to be suggesting.
He didn't create them at the very beginning...
He didn't create them when the earth was without form & void
He didn't create them on the first day.
He didn't create them on the second day.
He didn't create them on the third day.
etc, etc, etc.
The beginning is many things.
The beginning of the law was a beginning.
The beginning of the new covenant was a beginning.
The beginning of the exodus was a beginning.
The beginning of servitude to Egypt was a beginning.
I think it is well demonstrated that the one thing we can be sure about is that the "beginning" you mention doesn't mean the beginning of all things... the beginning of time... the beginning of creation...
He is evidently talking about the beginning of mankind. Whenever that took place... the beginning of mankind began with Adam & Eve.
Very simple when the assumptions are removed.
