You are quite correct to feel slighted and indignant about this outrage, Brother Ferd! I find the selection of "Cilantro Soup" in a Texas Chili cook-off as being the work of sinister forces.
However, the Tomato Basil Soup, if fear, will only add to the backsliding. :
consider me backslid! these people get what they deserve! (actually several are happy. we have a number of people doing a daniels fast so my "vegitarian chili" will be a hit with them!)

Felicity, when I make chili I brown the ground beef (and sometimes sausage also) along with onions (lots) and green peppers. Take the browned meat out of the pan and leave just a little of the grease. Make a rue out of that with flour, stirring it until it's lightly browned. Then slowly pour in a large can of beef broth, stirring the whole time cuz you want this to thicken up just a bit. Put your meat back in. Add a can of chopped tomatoes, a large can of tomato paste, a can of chopped green chilies and maybe a can of jalapenos (if you like it real spicy), about a teaspoon of Tabasco sauce, about 3-4 spoons of MEXENE chili powder (that's the only kind worth using!), some garlic powder, salt and pepper to taste. Also, if you like Cumin, you can add that. I usually do, but not everyone likes Cumin, so it's up to you.
Cook this for a couple of hours on a low heat or put it in your crockpot and let it go for about 4-6 hours.
We eat it over Fritos, cheese and chopped onions. But you could eat it any way you want.

Chili is a work of art..... Some people do add toppings now, like diced onion, shredded cheese, and even sour cream probably.........
But chili should stand on it's own.
Some have it with crackers or cornbread.

Serious? Then what do you serve it with? Because without the beans it's just tomato sauce and ground beef basically. You have to serve that with or on something I would think.

real chili doesnt use ground beef! we use a veriety of meats, Lamb, pork, beef. then dice it by hand in to a very small dice. It is stewed over low heat for a long time with an assortment of fresh and dried chilies.
I prefer mine served over rice, that is the Louisiana influence, but others like it with nothing else.
most will top it with fresh onion, cheese, and sour cream. or some combination of these.
generally it is served with crackers and Iced Tea (Or beer if you are a pure heathern)
