Use about 4 pounds of potatoes (red skin is best, but white will do). Boil them with the skins for about ten minutes till they just start to be tender. Slice them about 1/4 inch thick and spread them in a 9 X 13 Pyrex pan.
Mix up 2 sticks butter, about 3/4 c. honey, some garlic salt, onion powder, salt & pepper and about 2 t. red pepper and melt it all together in the microwave. Stir well. I'm really just guessing at the measurements, but I did use 2 sticks of real butter. Pour it over the layers of potatoes and bake at 350 for about 45 minutes, covered with foil. It's better if you do it in layers, pouring the mixture over each layer and then adding more potatoes and repeating.
My family loves these!!!

This sounds great Sherri. I've never done honey with potatoes. I will have to make these.

Sherri,
thanks for sharing this! I'm definately going to give it a try. It sounds delicious!! I'm not a fan of potatoes, but I will eat them if they have the skins on them. And I especially like redskin potatoes because they're small so there is alot of skin

If I eat enough potato skins, will that make me skinny?
