Heres one of my favorites.
Get a bag or two of frozen corn.
Heat up about a forth of a cup of veggie oil in a huge dutch over.
When its hot put the corn in and fry uncovered until some of the kernals
are brown.Add some fresh diced tomatoes and fry them down as well.
Stir it alot so it doesn't burn.When the tomatoes are good and stewed
add two cups of milk and cook this down real bubbly and thick.Add some red pepper and salt for seasoning.Use enough red pepper to make it spicy.
Its an easy way to make maque chou.I love it and it never stays long
in my house.Sometimes I use a can of regular rotel in place of the
fresh tomatoes.Its awesome.Happy Cooking.
