How is the canon of Scripture to be determined, assuming you do NOT accept as inspired and God-directed the decrees of those various catholic 'ecumenical' Councils of churches/bishops which are often touted by Catholic, Orthodox, and Protestant theologians as being 'authoritative'?

First off: put aside the rumors of the Catholic church having its way with the KJV since there are verses in the KJV that reproves all of the works of catholicism. I can't speak for modern Bibles, and so that is why I am focussing on the KJV.
Second: Jesus said that scripture cannot be broken. Jesus quoted from it and testified of how those that loved Him and keep His sayings, will keep the sayings of His disciples.
John 15:20 Since there is an urgency for us to continue in His words as His disciples, it stands to His will and promise that we would have them.
So what are the guidelines?
#1) Lean on the Good Shepherd to help you discern.
#2) Scripture cannot go against scripture. That is what was used to prune away the lost books of the Bible and the Apocrypha* ( *which the KJV translators did not regard them as scripture and thus inserted inbetween the OT and the NT as a historical reference index ).
#3) What about modern Bibles? The same guideline should be used. If the message changed from the way the KJV has it, then how does that change line up with the rest of scripture: even the ones in the modern Bibles to determine which message is the right one: the KJV or not?
Only God can show how the KJV is helping keep the meat of His words when in comparison to other modern Bibles, especially when those changes in modern Bibles support false teachings and apostasy whereas the KJV retaining that message reproves such false teachings and exposes apostasy.
Since keeping the faith is the good fight as we are led by the Spirit of God to testify of the Son in seeking His glory: then the Bible God wants us to have should serve to that end as well in the testimonies within.
