I place the salmon on a rack way above the coals and use soaked mesquite chips to "smoke" (I hope that isnt a sin) the salmon.

Thanks, I have some ready to grill.

I like to brush salmon with a mixture of olive oil, honey, fresh lemon juice, coarse pepper and kosher salt. If you don't like the sweetness of the honey, just leave it out.

The biggest don't: DON'T overcook salmon. Cook it until it is JUST done, and remove it from the heat immediately.

I love salmon--and my kids will eat it, too.

I never use any seasoning when I cook salmon. I season if at all afterwards.i like it ala natural.

Hubby always fillets ours. I have baked a King whole before and nope no scales. YUMMY !
