My mom gave me this recipe today. I haven't tried it, but she said my aunt did over the weekend and they were really good. I like that they are sooooo simple!

Aunt Aggie's Cookies:
1 c. Bisquick
1/2 c. oil
1 egg
1 box instant pudding (any size box works fine. Any flavor)

Mix this together. Make into balls, Flatten out a bit before you bake them and bake at 350 till done.

Easy Red Velvet Sandwich Cookies


1 Box Red Velvet Cake Mix
2 eggs slightly beaten
1 tablespoon bourbon (opt)
½ cup oil

Directions

Mix cake mix, eggs, oil in large bowl.
Roll 1 heaping teaspoon in ball about the size of a quarter. Place 2” apart on ungreased baking sheet. Cool in pan for 8 -10 minutes and then place on wire rack.

Bake at 375 for 8 minutes or until tops begin to crinkle.

Filling

8 oz cream cheese, 5 cups confection sugar, 1 tub of marshmallow cream. Blend and slowly add sugar until consistency is what you like. Place between two cookies.
Or use marshmallow cream or can of cream cheese.
Or use can use chocolate cake mix, and put red or green color in filling. Both are pretty for Christmas and both are very tasty.

Lemon Blossoms Cookies


1 Box Lemon Cake Mix
¾ cup vegetable Oil
4 large Eggs

Directions

Use miniature muffin pan and spray with Pam. Combine cake mix, oil, eggs for two minutes with electric mixer until well blended.

Fill each muffin cup ½ full. (One good teaspoon is about right) Bake for 12 minutes @ 350. Remove immediately and place on a tea towel to cool.

ICING

4 cups confection sugar
1/3 cup lemon juice
Zest of one lemon
3 tablespoon of vegetable oil
3 tablespoon water

Directions

Whisk above ingredients until well blended. As soon as you remove roll in mixture and place on wire rack with wax paper below to catch drippings.

Let dry for 1 hour before storing in air tight container. (Can place in cupcake papers) Layer with wax paper between rows to keep from sticking together.

I made these and they are very tasty, however, I think it is a stretch to call them cookies. More like minature muffins.

I made the best batch of homemade granola bars I've ever tasted today. Moist, sweet, delicious.

HOMEMADE GRANOLA BARS

You will need a good size cookie sheet with sides on it. Spray butter the pan, then put a sheet of parchment paper on that, making sure it extends up over the edges. Then spray the parchment paper. Set aside.

4 c. quick rolled oats
2 c. packed light brown sugar
3/4 c. flour
1 t. salt
1 t. ground cinnamon
1/2 c. dried cherries
1/2 c. dried blueberries
1 bag of white chocolate chips
about 1/2-3/4 c. honey
4 T. maple syrup
4-6 T. maple syrup
2 t. vanilla

Mix all the dry ingredients together, making sure you break up any clumps of sugar or fruit. Then add the wet ingredients. Mix well. Dump into prepared pan and press down to fill the edges and corners. Bake at 350 for 30 minutes. Let the pan stand to cool for about 5 minutes after you take it out of the oven. Then carefully take the parchment paper out of the pan and sit to cool a little more. Before it gets completely cooled, cut the granola bars into 1" x 3" pieces. YUMMY!!

Needless to say, most cookies use butter so I've had to find new recipes.

My sister found this one and I've modified it after several batches.....and best of all....NO butter



Oatmeal cookies ------- 375* Bake 10-12 minutes

3/4 c sugar
3/4 c brown sugar
1/3 c oil
1 egg
1 egg white
1 tsp vanilla
1 1/2 c flour
1/2 tsp salt
1 tsp Baking soda
1 1/2 c oatmeal

Mix sugars and oil, add egg and egg white, mix thouroughly; add vanilla.
Sift flour ,soda,salt and add to sugar mixture.
Last add oatmeal and mix together. Can also add chopped nuts of your choice, choc chips or coconut; I've also added raisins or craisins.......

I spray the cookie sheet with PAM and drop by spoonfuls. It makes 30 to 36 cookies . Bake 10-12 minutes (10 for me)
Leave on pan to cool a minute before removing to cooling rack.
They are crispy not chewy.......


What can I say? I found a recipe I can use and believe me I have made it many times in the last 6 mos. ( ya gotta have a snack once in a while )

For all of those with a Dairy allergy:

Nearly all "store bought" cookies contain milk. The only one I have found safe to buy and eat is Oreos. Yes, I know they aren't healthy, but........

In case you need to buy dairy free...look for the Kosher symbol-----
U in a circle and then the word Parve. This tells you it is dairy free.

Several weeks ago I was watching Alton Brown make cookies.

All of his cookies were the same size and it looked so neat and easy.
He had a cookie scoop.

Of course, now I needed one.
In my search I discovered they aren't cheap ( 19.95)

But-------Kohls came through for me. It was on sale, 25% off , then you can use another %off coupon there and I had one for 15 or 20% off, plus I had a $10 Kohls Kash.....what can I say? I'm cheap.

So I made my big purchase.It is wonderful. It would have been worth the $19.95.

There are several brands, but mine is the Food Network brand.
