WOW, very rich.

Check this out with Nutella. You know that is good!




Nutella Banana Bread

2 c flour
3/4 tsp baking soda
1/2 tsp salt
1/4 c unsalted butter at room temp
1 c sugar
2 large eggs
1 1/4 c mashed ripe banana (i used 2 bananas)
1/3 c milk
1 tsp vanilla extract
3/4 heaping cup Nutella

Preheat oven to 350 degrees. Spray 8×4-inch loaf pan with nonstick spray. In a medium bowl, whisk together flour, baking soda & salt. In a separate large bowl, beat sugar and butter with an electric mixer at medium speed until blended. Add eggs, one at a time, beating well after each addition. Add banana, milk and vanilla. Beat until blended. Add flour mixture, beat at low speed just until flour is incorporated (don’t over mix). Spoon Nutella into a small dish and soften in the microwave for about 15 seconds. Add 1 cup of the banana bread batter to the Nutella and stir until blended well. Spoon Nutella batter alternately with plain banana bread batter into the prepared pan. Swirl batters together with a knife. Bake 50 to 60 minutes, it will seem a tiny bit undercooked but that’s what makes it good. Cool for at least 15 minutes in the pan, and then turn out onto a wire rack to cool completely.



If I had Nutella in my house because, it has almonds in it, this would be me!

Thought this was a great finger food.




Pepperoni Pizza Puffs


3/4 cup flour
3/4 teaspoon baking powder
1 tablespoon Italian seasoning
pinch of salt (my addition, optional)
pinch of red pepper flakes (my addition, optional)
3/4 cup whole milk
1 egg, lightly beaten
1 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
1 cup cubed pepperoni
1/2 cup store-bought pizza sauce

1. Preheat the oven to 375 degrees. Grease a 24-cup mini-muffin pan. In a large bowl, whisk together the flour, baking powder, Italian seasoning, salt and red pepper flakes (if using) ; whisk in the milk and egg. Stir in the mozzarella, Parmesan and pepperoni; let stand for 10 minutes.

2. Stir the batter and divide among the mini-muffin cups. Bake until puffed and golden, 20 to 25 minutes.

3. Meanwhile, microwave the pizza sauce until warmed through. Serve the puffs with the pizza sauce for dipping.

NOTE: All my batter did not fit into the 24-mini muffin pan. So I made a full size muffin with the leftover batter. Some pans are larger than others so you may not have have an issue.

That looks great! My son is having some friends over here for New Year's Eve to hang out. I think I'll make a few batches of this for them. They'll love them.

After while, when I have a few minutes free time, I will post a recipe for a bacon maple muffin that is fantastic. You'll love it!

Congratulations, PO!!!! I agree, I like the name Audrey. My mom's best friend was named Audrey. I think sometimes we decide if we like or dislike a name partly because of someone we might have known who had that name, don't you?

Thanks! I bought her a cute little memory book.

Yes, my sister's best friend in high school was named Audrey. They were a couple of grades a head of me. When I was a Freshman, she said they were coming over to initiate me. I told her, "Come on over. I'll beat the tar out of you." My fondest memory of Audrey.

This is funny - I went out to supper tonight with a couple of friends. ONe of them was telling us about this great treat she had made for her grandkids just last week. It was THIS recipe

Looks like something the grandkids would like. I used my mini-muffin tins for wax melts and now they smell like candle fragrance. Don't know if I could use them again for cooking. And, drat, because I loved those pans!

This looks like a good and easy recipe to make for finger foods.

Hot Ham and Cheese Pinwheels



1 1/2 C warm water
2 T sugar
1 T yeast
1/2 t salt
4-4 1/2 C flour
1 pound deli ham, sliced thin
2 C cheddar cheese, shredded

Another recipe for the mini-muffin tins.

Cauliflower Power: Low Carb Mini Quiche Cups

Ingredients:
- 1/2 of a cauliflower (medium sized)
- 2 packed cups of washed and cut kale
- 1/2 cup shredded mozzarella cheese, plus more for garnishing
- 1/4 cup sun dried tomatos
- 1/4 cup egg whites
- 1/8 cup cottage cheese
- sunflower seeds for garnish
- tools: food processor, mini tart pan
