Roast, mashed potatoes, green beans, macaroni & cheese, Crescent Rolls and Banana Pudding. My house smelled SO good!
After dinner, I took the leftover roast and chopped it up and put barbeque sauce & ketchup and spices in it. Tomorrow we will have it for sandwiches. I have a lot of leftover mashed potatoes. I may try to make fried potato cakes; I've never done that before. Anyone have any success with those? Do I add something to the potatoes before I make them into patties? It seems like they would just crumble like this.

K is gone to camp. I made some pesto and ate with Triscuts and some roast beef slices.

That's what I had here, but I added a little ketchup too. I like that sweet Heinz taste. I ever took a big bottle of Heinz to Kenya with us. LOL

Kenyan ketchup is this nasty runny orange stuff. Horrible! The pastor that we first went to Kenya with in 2005 took a huge bottle of Heinz and I laughed at him, until I realized it wasn't such a bad idea. So I always take one now. This year I left the rest of it with the UPC missionary over there that we were hanging out with. She said her hubby would be thrilled!!! Poor missionaries get all the leftovers.

Here is a very basic recipe for pan fried mashed potatoes. For extra crispy dip in flour, egg wash, then flour again. Panko works great on these too.
1 1/2 c. leftover mashed potatoes
2 tbsp. milk
1 egg
1/2 tsp. salt
Dash of pepper
1/4 c. flour
1/4 c. cooking oil
Mash cold potatoes with fork until soft. Add milk. Mix well. Add egg, salt, pepper and flour. Mix until well mixed. Pan fry until golden.

We ate Subway for supper because I was busy cooking for 3 potlucks this weekend!
For tomorrow I made cheesy potatoes. If I liked potatoes, I'd probably enjoy these.
6 large russet potatoes - boil in water to cover them until done. Cool and peel the skins off, and cut up in bite size chunks. (I didn't bother peeling them cuz Keith wanted the skins left on). Put the potatoes in a deep dish cake pan.
1/2 c. butter
2 large onions, diced
Cook onions till soft but not brown
add 1/4 c. flour. Stir till smooth, but again, not brown.
Slowly add 4 cups milk, whisking as you do.
Then add a large block of Velveeta cheese
Stir until cheese melts and the sauce begins to thicken.
Pour over potatoes in baking dish. Crush up 2-3 c. of Corn Flakes. Sprinkle over the top. Then melt 1/2 c. butter and pour over Corn Flakes. Bake 350 degrees for 1/2 hour.
