Adobo Chicken With Rice on the side. Delicious!

Pork / Chicken Adobo Recipe



Estimated cooking time: 50 minutes


Adobo Ingredients:

*

1/2 kilo pork cut in cubes + 1/2 kilo chicken, cut into pieces or
*

choice of either 1 kilo of pork or 1 kilo of chicken
*

1 head garlic, minced
*

1/2 yellow onion, diced
*

1/2 cup soy sauce
*

1 cup vinegar
*

2 cups of water
*

1 teaspoon paprika
*

5 laurel leaves (bay leaves)
*

4 tablespoons of cooking oil or olive oil
*

2 tablespoons cornstarch
*

Salt and pepper to taste
*

3 tablespoons water

Adobo Cooking Instructions:

*

In a big sauce pan or wok, heat 2 tablespoons of oil then sauté the minced garlic and onions.
*

Add the pork and chicken to the pan. Add 2 cups of water, 1/4 cup of soy sauce, vinegar, paprika and the bay leaves. Bring to a boil. Cover and simmer for 30 minutes or when meat is tender.
*

Remove the pork and chicken from the sauce pan and on another pan, heat cooking oil and brown the pork and chicken for a few minutes.
*

Mix the browned pork and chicken back to the sauce and add cornstarch dissolved in water to thicken.
*

Add salt and/or pepper if desired
*

Bring to a boil then simmer for an additional 5 minutes.
*

Serve hot with the adobo gravy and plain rice.

Adobo Cooking Tips:

*

You have the option to add crushed ginger to the onions and garlic when sautéing. Ginger adds a unique flavor to your pork/chicken adobo.

adobe is easy to make. I have a friend that starts with boneless chicken though. Faster and easier

A couple of questions about the recipe, do you use a sweet paprika or a smoky one? Also, what type of vinegar do you use, seeing as how there are so many different ones. Do you have a preference for this dish?

We are in Arlington, VA with family and 10 of us ate at P.F. Chang's. I ate chicken, chicken, and chicken! Just about every way they make it except sweet and sour. I don't think anyone ordered it that way.

Ah, don't know, I will ask my wife, she is the cook,
She did not use Paprika this time & she uses white vinegar.
Also, she sometimes cuts up a red or green bell pepper.

Just in from Dinner. Tried out a new place. JJ's at the Copper Pot.

Lobster Stuffed Mushrooms
Baked large mushrooms stuffed with imported chunks of lobster served New England style.


Lobster Bisque
An extremely flavoral soup of cream, lobster juices and
aromatics served with chunks of lobster.

All dinner entrees include a bottomless bowl of mixed greens
served family style with house made warm garlic croutons,
original creamy vinegar and oil, buttermilk, and honey
mustard dressing along with garlic bread. Your choice of
vegatable, baked potato, cabbage casserole, or natural
cut french fries.

Fresh baked bread.

JJ's Terrace Cut
12oz of beef rolled in peppercorns and thinly sliced.
AND
Batterfried Lobster
Imported cold water tail hand breaded in a delightful batter
served on a bed of shoe string potatoes with drawn butter.

Hazlenut Cheescake
A luscious and decadant cheescake heightend in flavor
by the richness of rare hazlenuts.

Coffee

The coffee was prepared table side in a Vaculator
