Tonight we're finally having the Paul Deen recipe for Chicken & Wild Rice that I posted earlier. I used low fat mayo and non-fat cream of celery soup, so I'll let ya'll know how that worked!!

Also having sliced cucumbers and buttered corn and rolls. And a homemade coconut cake. I didn't work today, so I actually had time to cook!!!

I do work until one am but I fixed chicken stew and cornbread dressing along
with steamed veggies.It turned out awesome.Now I have to work it off.lol..

Ok, for dinner it was just me and my husband and Rodney, one of our interns who lives with us. Zac is in Adamsville and Jake is getting ready for the softball championship game in a few minutes. So we had this huge casserole and just three of us. Oh well....I thought it was awesome and I couldn't tell any difference in using the low fat/fat free stuff. Rodney thought it was great. Eddie.......not so much! He's not much of a casserole guy though. But, he liked the coconut cake, so I guess I passed.

Bacon and Tomatoe sandwiches. Yummy! The tomatoes are now ripe and we are enjoying them. Also, Yellow squash sauteed in butter and garlic.

We had grilled tilapia.....with Emeril Essence/Seasoning - a spicy/cajun type of seasoning....fresh cucumbers, fried potatoes with onion and a little of the above spicy seasoning, fresh yellow squash (fried, too)...I can eat the yellow squash out of our garden raw just sliced thin....Also, supposedly had "homegrown tomatoes,"...I believe the lady didn't tell me the truth on those. She told me they were grown just off "______ Road"....but they didn't taste as though they were home grown...HUSBAND COOKED FOR A CHANGE. ......Too many fried foods. I need to get back on Weight Watcher's Diet, for sure!!!

Tilapia is a type of freshwater fish that is even available now at Wal-Mart in 15 pound boxes. ....I think most of the tilapia at Wal-Mart or Sam's Club is imported from China. I know I have read that they are native to Africa and the Middle East, but I think the Wal Mart tilapia (which is pretty good tilapia) is from China. My husband even likes tilapia better than catfish, mahi-mahi, sole, bass, trout, ...well, maybe not as much as crappie.

Here are some things I just found at wikipedia about tilapia.

Tilapia is the common name for a variety of cichlid fishes of the genera Oreochromis, Sarotherodon, and Tilapia and is approximately equivalent to a taxonomic grouping known as the tilapiine cichlids. Tilapias inhabit a variety of fresh and, less commonly, brackish water habitats from shallow streams and ponds through to rivers, lakes, and estuaries. Most tilapias are omnivorous with a preference for soft aquatic vegetation and detritus. They have historically been of major importance in artisanal fishing in Africa and the Levant, and are of increasing importance in aquaculture around the world. Where tilapia have been deliberately or accidentally introduced, they have frequently become problematic invasive species.

Certain species of tilapia are sometimes called St. Peter's fish from the account in the Bible (Matthew 17:24−27) about Peter catching a fish that carried a shekel coin in its mouth, with the dark spots on the sides of the fish being the fingermarks of the saint. Although the name is also applied to the John Dory, a marine fish not found in the Sea of Galilee, one tilapia is found there, Sarotherodon galilaeus galilaeus, and has been the target of small-scale artisanal fisheries for thousands of years. In some Asian countries including the Philippines, large tilapia are called pla-pla. In Arabic the tilapia are called "bolty"...
