I made homemade vegatable beef soup tonight. It was yummy and I was able to put some in the freezer for later on.

My hubby put a beef roast, potatoes, and carrots in the crockpot this morning. He fixed a big bowl of salad this evening and everything was wonderful!

I have beef stroganoff cooking on the stove - made with fat free sour cream and whole wheat noodles. The noodles are not my favorite, but we're trying to do better since we ate our way through Italy.

I've made it for about 20+ years; it's one of our favorites. It's not hard, but it has to cook a long time for the meat to get falling-apart tender.
