Adam was created in the image of Jesus (God manifest in the flesh)
As far as God was concerned Jesus was slain before the foundation of the world
Rev 13:8
8 And all that dwell upon the earth shall worship him, whose names are not written in the book of life of the Lamb slain from the foundation of the world.
God calls those things that are not as though they are.
Rom 4:17
17(As it is written, I have made thee a father of many nations,) before him whom he believed, even God, who quickeneth the dead, and calleth those things which be not as though they were.
They are not, as far as we are concerned, but to God it is in existence
These are some of my thoughts on the subject. Although i suppose that no one really knows except for God.

I agree with your interpretation. We are made in the image of Christ.
According to his foreknowledge Jesus was the beginning of the creation of God.
These things saith the Amen, the faithful and true witness, the beginning of the creation of God; Because God lives in eternity, timelessness, and He knows the end from the beginning, He can say with certainty that the Son existed and speak in such a way even though the Son did not exist outside the foreknowledge and plan of God until the end of times.
There are a few others that are plausible as well except the Trinity. We can rule that out from verse 27.
