Leftover Turkey Recipes
I just found this recipe that I want to try with the leftovers. Anyone else have anything good?
TURKEY & CORNBREAD CAKES w/CRANBERRY RELISH
7 T. butter, divided
1/2 c. chopped onion
1/2 c. chopped celery
2 cloves garlic, minced
1T. minced sage
3 c. crumbled cornbread
2-1/2 c. chopped cooked turkey
1/2 c. mayonnaise
1 egg
1/2 t. poultry seasoning
1/2 t. salt
1/4 t. pepper
Cranberry Relish (following)
In large skillet, melt 3 T. butter over med. heat. Add onion, celery, garlic, and sage. Cook five minutes till tender. In a medium bowl, combine onion mixture, cornbread & turkey. In a small bowl, combine mayonnaise, egg, poultry seasoning, salt & pepper. Add to onion/cornbread/turkey mixture. Stir gently to combine. Shape mixture into ten patties. In a large skillet, melt remaining butter over med. heat. Cook patties, in batches, 4-5 minutes per side or until lightly browned. Serve with Cranberry Relish.
CRANBERRY RELISH
1 - 16 oz. can whole-berry cranberry sauce
1 can mandarin oranges, drained
2 T. sugar
1 t. balsamic vinegar
In a medium saucepan, combine all ingredients. Bring to a boil over medium heat. Reduce heat and simmer twenty minutes. Serve warm over turkey cakes.
