Coon

Skin and clean a young coon thoroughly
cut into pieces. ( as preparing chicken )
In a good stainless steel electric skillet add
1/2 cup margarine
coon parts
seasoned with salted with cayanne pepper ( prepared ahead )
1 whole onion sliced
3 sweet potatoes sliced

Layer the above alternately
cook at 350 degrees for 30 mins.
reduce heat to 250 degrees for 1 hr. then turn control to simmer
and cook until meat is tender
usually about 3 hours.
very tasty for those who seek adventure
