I will have to try that one. The thing you have to be careful about with Soy Sauce is the sodium. If you are not careful it makes the meat taste too salty.
Citrus juices like pineapple and orange juice are great tenerizers as you said. Funny true story. Years ago when I first heard that I made up a marinade that featured orange juice heavily.
I made the mistake of letting it marinade overnight which was way too long for the amount of orange juice I had. The steaks ending up tasting like orange juice! Arghhh. Luckily they were an inexpensive cut of meat I was trying to figure out how to really tenderize so no great loss.
Your soy sauce and pineapple juice might be a good one for tenderizing less expensive cuts of meat like top sirloin.
