ok, so I was going to quote the original post, but I can't find it...anyway - Abi posted a chicken casserole that required buttered ritz crackers....she mentioned how many times she used the word "buttered" in the post (like 100)
Anyway, ABI!? This is in my oven currently and can I say it is DELICIOUS?? I am so excited.
I also made this:

2 cans of creamed corn

preheat oven to 350
spread taters evenly over the bottom of the pan
cook ground beef/turkey till brown (I like to put lots of garlic powder on the meat while it is cooking... sometimes a sprinkle or two.. or three of chili powder)
drain grease from meat
spread meat over top of taters
pour cream of mushroom over the meat
pour creamed corn over the cream of mushroom
sprinkle some more taters over top
cover with aluminum foil and bake until taters on top start to get brown
take out and sprinkle cheese over top (please, do be generous....)
place back in oven without aluminum foil for bout 10 minutes.
let cool and then chow down... make sure to leave some for tomorrow.... it really tastes better the next day
I got it off GNC today - I've made both tonight b/c my husband isnt a big chicken fan - but he will love this
YUM-O on both accounts.
thanks y'all

This recipe is deceptively simple. Don't let that fool you--it's delicious!
1 lb. boneless, skinless chicken breasts, cubed
1 pkg. cream cheese, softened
1 pkg. Ritz crackers, crushed (4 pkgs. to a box--use one pkg. of crackers--not a whole box)
1 stick butter, melted
1 can Campbell's cream of mushroom soup
1 can Campbell's cream of chicken soup
Preheat oven to 375. In a pan over medium heat, saute cubed chicken for about 8-10 minutes until cooked through (but not browned). Remove from heat. In a large bowl, combine cooked chicken, cream cheese, cream of mushroom soup and cream of chicken soup. Lightly salt and pepper.
In a bowl, stir together crackers and butter. Reserve 1/4 c. buttered crackers. Press the rest of the buttered crackers into the bottom of a 9x13 glass baking dish. Pour chicken mixture on top of the buttered crackers. Top with remaining buttered crackers. Bake for 30 minutes.
(Did you notice how many times I mentioned "buttered"?) LOL!!!
I emphasized "Campbell's" because the soups are creamier, and I've tried the offbrands--because this recipe is so simple, it's important to use high quality ingredients. ONLY use REAL butter. Margarine or butter substitute will ruin this recipe.
Some recipes just can't be slimmed down.
Normally using chicken breasts increases the cost of a dish, but because there are only a few ingredients, this is still a fairly inexpensive meal. We usually have broccoli and fried yellow squash with this casserole.
Hey...I'm glad you tried it...this dish is my kids' FAVORITE meal!!!!! The three of them can nearly demolish the whole thing all by themselves.

ok, so my picky husband wouldnt even TRY it....(the chicken dish)
and he hated the other one b/c it had corn in it....but he did try it
the rule in our house is "if you dont like it, tough - go to McDonalds"
I try to make one new thing every week - to expand their tastes. Before I came into their world, it was pork chops, mashed potatoes (instant), corn (straight out of the can) mac and cheese out of a box (Oh the iniquity) and the occasional carrot. They'd never heard of some things - and never eaten any thing green. My first new thing with them was - get this - SALAD.
now they love salad. - and they'll eat green beans - one kid will eat peas...
they love dirty rice and sausage, mushrooms, all kinds of things...I got one kid to eat pepper from the garden. My husband will eat stuffed bell pepper....Its a slow process, but I'm trying.
but my husband hated dinner last night - oh well, the kids inhaled it.
and oh, they didnt even know who Ralph Lauren was and had never stayed in a hotel. Can you say deprived??
Now the kids can spot fake LV bags and Dooney and Bourke purses (or ducks as they call them).....and my 14 yr old thinks he HAS to have RL polos. (but he doesnt get them)........I'm so proud
