Fruit Salad with Honey-Yogurt Sauce


You can prepare and refrigerate the yogurt sauce up to a day in advance. You can also combine and refrigerate the fruit mixture (except the banana) up to three hours ahead; stir in the banana just before serving to prevent discoloring.

Ingredients
1 cup vanilla low-fat yogurt
1 tablespoon honey
1 1/2 teaspoons grated lime rind
3 cups cubed pineapple (about 1 medium)
1 1/2 cups chopped Braeburn apple (about 1 large)
1 cup orange sections (about 2 oranges)
1 cup chopped peeled kiwi (about 2 large)
1/3 cup flaked sweetened coconut
1 medium banana, sliced
1/4 cup slivered almonds, toasted


Preparation
Combine yogurt, honey, and lime rind in a small bowl.
Combine pineapple and next 4 ingredients (through coconut) in a large bowl; toss gently to combine. Just before serving, stir in banana. Top fruit mixture with yogurt sauce; sprinkle with almonds.

Yield
6 servings (serving size: 1 1/4 cups fruit mixture, 2 tablespoons sauce, and 2 teaspoons almonds)

Wow, this was the best fruit salad. I left out the bananas and almonds, but other than that I followed the recipe to the letter. The flavor combinations were amazing. Do not leave the out the lime zest, it really gives it that something extra special 02/24/07

Amazing what a little honey and lime rind can do for yogurt! This definately is one of the best fruit salads I have ever eaten. I served it with the African Sweet Potato Stew with Red Beans (Oct. 2004); even though it sounds like a weird combination, the contrast in flavors was absolutely exquisite--the smooth yogurt sauce of the salad cooled the spiciness of the green chile in the stew perfectly! A keeper!!! 09/02/06

This was good, but I made the mistake of making a big bowl of it and mixing the sauce in with it. After a little while of the sauce sitting in with the fruit, the fruit juices made it very thin and runny, with not much flavor. Definitely wait and just top the fruit with the sauce upon serving. 01/02/06

Made this for Christmas dinner and it was excellent. The yogurt-honey sauce was delicious, and I added marashino cherries for a little more color. My kids said the sauce was good enough to eat on its own. Will definitely make this fruit salad again. 12/25/05

This may be the best fruit salad I've had - it received rave reviews, even from picky family members. I served it with the dressing on the side, and recommend topping it with the pistachio granola. 12/27/04
