Carrot Cake (the 4 cups carrots makes this very yummy)
Mix well:
2 cups white sugar
4 eggs
1 1/3 cup oil
Mix together and add to above
2 cups flour
2 1/2 tsp. Baking powder
2 tsp. Baking soda
2 tsp. cinnamon
4 cups grated carrots
Bake at 350F 45-60 min (to touch)
Icing
1/4 cup margarine softened
1/2 pkg. (4oz) cream cheese softened
2 cups icing sugar
2 tsp. Vanilla
Cream butter & cream cheese--add icing sugar and vanilla--beat well
