BAKED POTATO SOUP
1/2 cup butter
1 cup green onions, chopped
1/4 tsp salt
1/4 pepper (I used more)
1/4 cup flour
4 cups milk
2 large baking potatoes (baked in microwave)
4 oz. Velveeta cheese or 2 cups shredded cheddar cheese (I use both!)
1 pack bacon, fried and crumbled
Melt butter in soup pot. Saute onions, add salt, pepper, and flour.
Add the milk, stirring constantly. Mixture will start to thicken, may
add more milk to desired consistency. Chop potatoes up and add
to soup mixture. Stir until desired thickness. Add cheese and half
of the bacon. Garnish with leftover bacon, shredded cheese and
whatever else you might like on top!
