Take a watermelon, cut off both ends. Cut off all the rind, trim flat on top and bottom.

Stand up on end and place on large platter. Pat the sides dry with a papertowel and "frost" with whipped coconut milk or lite Cool Whip. Decorate with fresh fruit!

That is so neat!! I suppose you'd use a
"seedless" watermelon? I don't guess it
would matter though.

We thought this one was seedless, but it wasn't, but you're right it really doesn't matter - - once you slice it, it's just like eating watermelon anyway.

I was surprised how many enjoyed having that option over the cupcakes.

Yummy! What keeps the whip from sliding off the wet melon? Also, did you use Cool Whip or whipped coconut milk?

I used a paper towel to pat it "dry" - - it didn't slip off at all. I used Cool Whip.

This was about 10" high, so I used two containers of Cool Whip.

Curse those Twinkies!

I'm building my supplies of good things.....got coconut flour, coconut oil, faxseed flour, home raised fresh eggs, clean, lean beef and of course, weekly I go to the Farmer's Market for all their fresh fruits and veggies.

The only downfall to eating better requires me to cook/prepare everyday - trying to adjust to that since I've been used to a bowl of cereal for dinner.
